Potato Hash
Well, I had some veggies around the house and was craving potatoes, so I decided to throw some stuff together for a potato hash for dinner one night last week.
Here is what I put in it:
4 small yellow potatoes
1 yellow summer squash
1 orange bell pepper
1 zucchini
1 tomato
1 oz diced prosciutto
1/2 cup egg beaters
2 oz shredded reduced fat cheddar jack cheese
1 Tbsp olive oil
I diced up all the veggies. Then heated a pan and put the olive oil in and tossed in the potatoes to get them cooking. Once they started browning and crisping up I added the bell pepper, squash, and zucchini. Once those were cooked I added in the tomato and prosciutto, once heated through I added the egg beaters and mixed it all up.
Very simple, full of color and veggies, and delicious :)
Calories: 578, 77 carbs, 16g fat, 36 protein.
