Southwestern Chicken with Bean Sauce


This meal is very low-cal, but with a lot of flavor! We have had this meal a couple of times now and it is just delicious....so full of flavor that is fills you right up!

(my chicken is almost completely hidden beneath that delicious bean sauce. I served this with some rice - white rice cooked in chicken broth with taco seasoning, and some frozen corn and mixed veggies)

This is from a cookbook I have called "The New Holly Clegg Trim & Terrific Cookbook."

This is the description Holly puts in the cookbook:

"The beans dissolve to create a great tasting secret sauce for the chicken. Top with cheese and chopped green onions, and serve with yellow rice. "
Ingredients:
2 lbs skinless, boneless chicken breasts ( I used chicken tenders since that is what I had on hand)
1 (16 oz) can fat-free refried beans
1/2 cup chopped red onion
1 (16 oz) jar salsa (this is where you can twist the recipe - different flavors of salsa will make it different, but always good...today we used a Pace Triple Pepper Salsa, spicy but flavorful)
1 Cup shredded reduced-fat sharp cheddar cheese (optional)
1/4 cup chopped green onions (optional)

Preheat the oven to 350F.

Place the chicken breasts in a 2-quart oblong baking dish coated with non-stick cooking spray. Spread the beans to cover the top of the chicken. Sprinkle with the onions. Pour the salsa evenly over the top. Cover with foil, and bake 80 minutes, or until the chicken is done. Sprinkle with the cheese and green onion, if desired, and serve.
